St. Regis Signature Rituals

Signature Rituals are an integral part of the St. Regis brand and are at the heart of an exquisite stay. The Astors, The St. Regis founding family, practiced these glittering traditions for centuries and, through time, have defined the hotel collection since its founding by John Jacob Astor IV in 1904. Today, each hotel in our portfolio celebrates three daily rituals — the Bloody Mary Ritual, the Evening Ritual and the Afternoon Tea Ritual — each a modern articulation of timeless tradition and an opportunity to invite guests to experience our enduring legacy.

The Evening Ritual

Champagne sabering dates back to the 1700s when Napoléon Bonaparte and his cavalry of men would win wars and to celebrate, they would saber bottles of champagne. Our founding family The Astors often did this as a way to welcome the evening and to bid farewell to the working day back in the late 1800s. Today, we celebrate this ceremonious ritual daily at 6:00 pm in Astor Lounge, lobby-level.

St. Regis Signature Ritual

Napoléon and his men would be on horses so it would be difficult for them to unwrap and unscrew a bottle and hence they would grab a saber and chop off the top of the bottle. He once proclaimed of champagne, “In victory one deserves it, and in defeat, one needs it.”

Today, champagne sabrage takes place each sunset at various St. Regis hotels around the world. The St. Regis Toronto hosts this signature ritual at 6:00 pm in Astor Lounge seven days a week, located lobby-level, to bid farewell to the working day and welcome the evening. Guests can enjoy a distinct moment of anticipation before the bottle is opened with a dramatic pop, accompanied by the festive cheer.

The Original Bloody Mary

Invented by famed barman Fernand Petiot at The St. Regis New York in 1934, the Bloody Mary remains the signature cocktail of St. Regis. Once rechristened the "Red Snapper” as the name Bloody Mary was deemed unrefined for the hotel's elegant clientele, today, each St. Regis address crafts its own local interpretation of the libation to pay homage to Petiot's original recipe.

Our version of the classic Bloody Mary, named the 'Rouge 140', is available at LOUIX LOUIS grand bar and restaurant, located on the 31st floor of The St. Regis Toronto. The Rouge 140 pays tribute to Toronto, the “most multicultural” city in the world. There are people from more than 200 cultures, and more than 140 languages spoken around Toronto.

Each culture has its own flavours in the culinary world but they are all bound together through the tomato, which is indubitably one of the most important vegetables in Ontario. A multitude of flavours from these various cultures are represented in our version of the Bloody Mary as we look to honour the people who live here.

The Art of Afternoon Tea

Afternoon Tea became a favourite pastime of many luminaries, including ‘The’ Mrs. Caroline Astor, who adopted the tradition at The St. Regis New York in the early 1900s. For her, afternoon tea was a joyful occasion and an opportunity to host gatherings with close friends as a prelude to her grand galas. Today, Afternoon Tea is available each Saturday and Sunday from 2:00 pm to 5:00 pm in Astor Lounge, lobby-level.

Indulge in our timeless Afternoon Tea ceremony, a Signature Ritual of the St. Regis brand, offered on Fridays, Saturdays, and Sundays from 2:00 PM to 5:00 PM in Astor Lounge, located lobby level.

The tradition of afternoon tea is said to have been introduced in the mid-1800s by the Duchess of Bedford of Great Britain, who enjoyed gathering friends over a cup of tea and a slice of bread and butter to stave off hunger between lunch and dinner. These occasions became a favourite pastime of many luminaries, including ‘The’ Mrs. Caroline Astor - the mother of the founder of The St. Regis and grand dame of New York high society during the Gilded Age – who transformed the occasion into an exclusive private social gathering for the city’s elite. Today, Time for Tea remains a quintessential St. Regis tradition and we are proud to work with Toronto-based Sloane Fine Tea Merchants who has curated an impeccable selection of fine teas including a bespoke blend made for The St. Regis Toronto, named Midnight Blossom.

Inspired by Mrs. Astor, Midnight Blossom pays tribute to her iconic galas where only a handful of her 400 notable guests would be invited to join her afterwards for a highly coveted dinner at midnight, known as the Midnight Supper. Made exclusively for The St. Regis Toronto, Midnight Blossom captures at once the actual flowers used around her residence, the exotic woods of the ballroom, the potted palms and apple blossoms that lined the hallways, and the light crisp essence of champagne wafting through the crowds.
